Cauliflower "Rice"
Cauliflower can make a delicious substitute for rice! Just process cauliflower florets in the food processor at high speed until they are the consistency of rice. Watch the processing carefully so they don't become cauliflower puree. Use the "rice" in place of rice in salads or stuffings, or as a base for stir-fried meats and vegetables! Create a fantastic side dish by adding fresh herbs or other seasonings, finely chopped vegetables or dried fruits. Use raw, or saute. Get creative with seasonal produce to create a fun and tasty dish!
Cauliflower Kale Sausage Soup

1 head cauliflower cut into 1/2 in chunks
1 lb ground pork
1/2 onion diced
Minced garlic to taste
6 leaves kale torn into bite size pieces, remove tough stems, or use 3-6 cups kale
6 cups chicken stock or water
1/3 cup full fat canned coconut milk
1/2 tsp rubbed sage
1/4 tsp crushed fennel
1/4 tsp thyme
1/4 tsp crushed rosemary
1 T olive or coconut oil
Sea salt, black pepper and red crushed pepper to taste
Heat oil in soup pot over medium heat. Saute onion for a few minutes. Add garlic and cook for a minute. Add pork and seasonings (red pepper flakes if using) and cook until pork is cooked through. Add stock/water and cauliflower and cook for about 10 minutes. Add kale and coconut milk and cook for 5-10 minutes over low heat. Season to taste with salt and pepper. Enjoy
