Roasted Beets

1 large beet, peeled and cut into 1 inch chunks
2 small sweet onions, peeled and sliced into 6 wedges
3 small yellow sunburst squash
3 cloves garlic, crushed and chopped
2 T. olive oil

Sea salt and fresh ground pepper to taste

Heat oven to 400 degrees. Spray or lightly grease baking sheet with olive oil. Put veggies and garlic on baking sheet and drizzle with olive oil and season with salt and pepper. Mix veggies lightly with your hands. Bake in oven for 30-45 minutes. Adjust seasonings as needed.
