Lambsquarters Pesto From Greta Holmstrom, Building and Planning
2 cups tightly packed fresh lambsquarters leaves
1/2 cup pine nuts, walnuts, hemp seeds or pistachios
1 clove garlic
1/4 cup extra-virgin olive oil
1 tablespoon lemon juice
sea salt and freshly ground pepper
Place lambsquarters leaves, nuts, and garlic in food processor. Pulse at low speed until mixture is coarse. Add olive oil, lemon juice, and salt and pepper to taste. Process to combine.
Makes about 1 cup
